This soup literally comes together in about 5 minutes. I don’t know why I didn’t think of it sooner! It’s so easy I’m not sure I can even call it a recipe. But anyway, it’s super creamy and delicious, and it’s super healthy! If you’re not a fan of curry, try substituting chipotle or southwest seasoning for the curry and ginger. That’s yummy too!
If you want to make your soup heartier, try adding protein like chicken, beef, or shrimp.
I bought my canned pumpkin, coconut milk, and shrimp from Costco.
The pumpkin is rich in beta-carotene. The coconut milk provides healthy fats, and the curry and ginger are anti-inflammatory!
1 can Organic Pumpkin
1 can Organic Coconut Milk
¾ tsp. Salt (or more to taste)
¼ tsp. Black Pepper
1 tsp. Curry Powder
¼ tsp. Ground Ginger (optional)
Cilantro for garnish.
Combine all ingredients in a saucepan over medium/high heat for A few minutes until hot. Enjoy! Yep that’s it. Told you. Five minutes!
