Chocolate Brownie Waffles {Grain Free • Dairy Free}

I love chocolate, and so does my whole family. One day I was about to make my kids some grain free waffles, and I thought to myself, “Self, why on earth have you not ever made these with chocolate?” A little while later, we were eating grain free, dairy free chocolate brownie waffles! They were really good on the first try, so here is the recipe! “Good call, Self!”

These gluten free, grain free, dairy free waffles taste like brownies—a slight bit crispy on the edges, and chewy on the inside! They taste like dessert but you’ll get some good nutrition with these too. They contain coconut oil for some good fatty acids; almond flour for vitamin E, calcium, and potassium; and cacao/cocoa powder for magnesium and antioxidants! So eat up—they’re actually good for you!

Ingredients

2 c. almond flour

1 c. tapioca or arrowroot starch

¼ c. coconut sugar

1/3 c. cacao powder or cocoa powder

2 tsp. baking powder

1/2 tsp. salt

1 large egg

¼ c. coconut oil (melted), additional for greasing waffle iron

1 c. milk of choice (almond, cashew, coconut, or dairy)

2 tsp. vanilla

1 tsp. apple cider vinegar

1/2 c. dark chocolate chips (optional)

Directions

Preheat waffle maker to medium/high. Use a mixer to combine the dry ingredients. Add egg, coconut oil, milk, vanilla, and apple cider vinegar. Combine well. Mix in chocolate chips if desired. Let sit about 5 minutes. Batter will be thick.

Scoop out about 1/2 cup of batter (or amount recommended for your waffle maker) and pour onto greased waffle maker. You may need more or less depending on your maker. Close lid and let cook for about 4 minutes (adjust if your maker is smaller or larger than average). Note that grain free waffles take a little longer to cook than traditional ones.

Carefully remove, and repeat with remaining batter. Top with grass fed butter, pecan, and maple syrup.

To keep finished waffles warm, place on a baking sheet in a 200˚ oven.

Serve with grass-fed butter (if you do dairy) and a little maple syrup, or make it a sundae with ice cream and your favorite toppings!

Makes 4 large (about 7”) waffles (in standard waffle iron)
