Preheat oven to 375˚. Grease a 9 x 13” baking dish. Set aside about 4 oz of shredded cheese and ½ cup of pork rind crumbs. Combine all other ingredients in a large bowl. Transfer mixture to the baking dish and spread evenly. Top with remaining cheese and pork rind crumbs. Bake for about 45 minutes. Optional: Place casserole in broiler for 4-5 minutes to brown the top. Remove from oven and let stand for about 10 minutes before serving. Makes 6-8 servings.
