The combination of ham, cheese, and chicken is one of my favorites, but pounding chicken until it’s nice and thin, layering ingredients, rolling them up, and breading each can be a little time consuming! Chicken cordon bleu is delicious, but I’m all about keeping things as simple as possible.
All the ingredients for this dish can be mixed up quicky and dumped in a casserole dish, and has all the flavors of traditional chicken cordon bleu. Instead of serving it with rice, cauliflower rice is mixed right in—to keep it super easy, I just microwave a bag of the frozen stuff from Costco for about 3 minutes to thaw. Ground pork rinds are used in place of bread crumbs. I like these, but you can also grind your own pork rinds in a food processor. Easy Peasy.
Also, don’t worry too much about being exact with the main ingredients (chicken, ham, and cheese). If you really love ham, go ahead and add a little extra!
3-4 c. Cooked, chopped or shredded chicken
8 oz. Chopped ham
12 oz. Shredded Swiss cheese, divided
1 lb. Riced cauliflower (thaw if using frozen)
1 c. Pork rind crumbs, divided ( I like these, but you can also grind your own
¾ c. Mayonnaise ( like Chosen Foods or Primal Kitchen brands)
¼ c. Dijon mustard
4 Eggs
1-1/2 tsp. Salt
½ tsp. Ground pepper
½ tsp. Onion powder
Preheat oven to 375˚. Grease a 9 x 13” baking dish. Set aside about 4 oz of shredded cheese and ½ cup of pork rind crumbs. Combine all other ingredients in a large bowl. Transfer mixture to the baking dish and spread evenly. Top with remaining cheese and pork rind crumbs. Bake for about 45 minutes. Optional: Put casserole in broiler for 4-5 minutes to brown the top. Remove from oven and let stand for about 10 minutes before serving. Makes 6-8 servings.
